Sweet Potato Nachos

Turns out, something very good comes from Paleo recipes. ;) (teehee. kidding!)

These nachos!


I don't even know if these are technically "Paleo", but no matter.

I made sweet potato "chips", and topped them with ground turkey, cheese, guacamole, and sour cream (or yogurt!).

Yum!!

They were so indulgent and delicious, and felt pretty healthy, too!

Good party or game day food. Or just dinner.


Recipe:
Adapted from: Paleo Grubs and my friend Kristen Miller!

Ingredients:

One large sweet potato (try to find one that is about the same width the whole way across)
coconut/olive oil
1/2 lb ground turkey
1/4 cup freshly grated cheddar cheese
siggi's yogurt (or Greek yogurt, or sour cream)

2 avocados
juice of 1/2 a lime
salt
pepper

Recipe:

Slice the sweet potato as thin as possible. (If you own a mandolin slicer, you win life right now)
Coat in a light layer of oil, and sprinkle liberally with salt and pepper.
Bake at 375 degrees for 20-30 minutes until golden and crispy, flipping once or twice during cooking.
It's a fine line between burning them, and getting them crispy enough.  Just try and see how it goes, and they'll taste great either way :)





Brown and cook the turkey in a bit of oil.  Season with salt and pepper, and cumin or other spices as you like.

Dice the avocado, mash with the salt and pepper, and squeeze in a bit of lime juice. Voila! Guacamole.

Pull the chips from the oven. Assemble around the edge of a large plate in a circle.  Put the ground turkey in the center. Sprinkle with the shredded cheese. Top with guacamole and yogurt.

Dive in!

Chicken Enchiladas with Green Sauce { with siggi's yogurt! }

Enchiladas are one of my favorite go-to dishes to make.
Why? Because you can never really screw them up!
Filling. Tortillas. Roll. Sauce. Cheese. Bake.  Boom! Amazing, fool-proof easy dinner!



I like both red and green enchilada sauce, but this week I was feeling the green sauce, and inspired by Haylie Duff's blog!

Plus, I knew I wanted to use the siggi's plain yogurt in place of sour cream!
The siggi's dairy brand is an even tastier sour cream alternative than Greek yogurt, because it is even more creamy! Yum.

Recipe:
Adapted from: Real Girl's Kitchen - Creamy Green Enchees


Ingredients:

3 chicken breasts
cumin powder
salt
pepper
olive oil

5 tortillas (medium size: corn or flour - I used a corn/wheat blend from Sprout's)
20oz can green enchilada sauce (mild, or medium)
2 containers siggi's plain yogurt
1 cup freshly grated cheddar or monterrey jack cheese
3 Tbsp roughly chopped cilantro
2-3 radishes, sliced thinly, or grated
1 lime - quartered into wedges

Directions:

Drizzle the chicken with olive oil and sprinkle with salt, pepper, and cumin.
Bake at 350 degrees for about 20-30 minutes, until cooked through.   Let cool for 15 minutes
Shred or chop the chicken. You can use your food processor to shred, which is super quick!


Heat a saucepan over medium low.  Add 2 Tbsp of cilantro, and 2 big spoonfuls of  the yogurt.  Stir until combined and slightly warm.
Pour 2/3 of the sauce into a heatproof bowl, and leave the remaining 1/3 in the pan.
To the bowl, add the chicken and 1/2 cup of the grated cheese.  Stir until combined.


Spread a spoonful of the remaining sauce in the bottom of an 8x8 pan.
Fill each tortilla with the chicken mixture, roll up, and place seam side down in the pan.
Once all are rolled up, pour the remaining 1/3 of the sauce over the top and edges of the enchiladas.
Sprinkle with remaining 1/2 cup cheese.




Bake the enchiladas at 350 degrees for 15 minutes.

Top with remaining yogurt, and garnish, if desired, with cilantro, radish and/or a squeeze of lime.

siggi's yogurt

Have you guys tried siggi's yogurt yet?? It's so great.



I am always checking ingredients lately, and love coming across a product with so few, all natural ingredients! Siggi's yogurt is definitely that product. No gross gelatin, no fake sweeteners, etc. etc.!
Just milk, cane sugar, fruit, and pectin. Yay!


Siggi's is an Icelandic skyr - style yogurt.
Skyr is the traditional yogurt of Iceland. It is a thick, strained yogurt, similar to Greek yogurt, but even smoother and more creamy. (Less stirring required! You know you hate the stirring).
As a result of the straining process, skyr comes out with 2-3 times the protein count of standard yogurt.
Siggi's uses all natural milk from grass-fed cows, simple ingredients, and adds much less sugar than other brands, resulting in a slightly tart, very healthful, delicious yogurt!

Riley's Painting Party!

I had the privilege of helping my bestest friend Jessica set up and host her sweet daughter's 6th birthday party - a rainbow colored painting/art party theme!

It was so much fun. She came up with such a fun idea, I had to share it with you!!


All the decor was brightly colored, in all the colors of the rainbow.  Each girl got her own apron with her name on it, and everyone got to paint their own canvas to take home. A Painting Party!! It was such a hit.

Rice Krispies Paint Brushes!
(inspired by The Celebration Shoppe)


These were so fun to help make! Make regular rice krispie treat bars, but while warm, push a large popsicle/ice cream stick into the bar, and mold into a paint brush shape.

When cooled, dip the ends of the "brushes" into melted candy melts chocolate to resemble the paint!
Too cute.




These paint splotches on the table were the best idea, and the paint drip stickers she found at Hobby Lobby blew my mind! So perfect! We stuck them to empty paint cans from Home Depot and used them as flower vases. I loved these!

The girls has such a fun time!
We set out a ton of adhesive-backed foam stickers in simple shapes for the girls to choose from.  They stuck the stickers to the blank canvas, painted over it in abstract designs, and then peeled the stickers off, when dry, to reveal the white shape left behind.

We were ready with the cleaning wipes, but the girls actually made very little mess. I was impressed :)




Last, but not least, this amazing "paint" splattered cake by Custom Cakes by Nicci was so cool!!
