Sweet Potato Nachos

Turns out, something very good comes from Paleo recipes. ;) (teehee. kidding!)

These nachos!


I don't even know if these are technically "Paleo", but no matter.

I made sweet potato "chips", and topped them with ground turkey, cheese, guacamole, and sour cream (or yogurt!).

Yum!!

They were so indulgent and delicious, and felt pretty healthy, too!

Good party or game day food. Or just dinner.


Recipe:
Adapted from: Paleo Grubs and my friend Kristen Miller!

Ingredients:

One large sweet potato (try to find one that is about the same width the whole way across)
coconut/olive oil
1/2 lb ground turkey
1/4 cup freshly grated cheddar cheese
siggi's yogurt (or Greek yogurt, or sour cream)

2 avocados
juice of 1/2 a lime
salt
pepper

Recipe:

Slice the sweet potato as thin as possible. (If you own a mandolin slicer, you win life right now)
Coat in a light layer of oil, and sprinkle liberally with salt and pepper.
Bake at 375 degrees for 20-30 minutes until golden and crispy, flipping once or twice during cooking.
It's a fine line between burning them, and getting them crispy enough.  Just try and see how it goes, and they'll taste great either way :)





Brown and cook the turkey in a bit of oil.  Season with salt and pepper, and cumin or other spices as you like.

Dice the avocado, mash with the salt and pepper, and squeeze in a bit of lime juice. Voila! Guacamole.

Pull the chips from the oven. Assemble around the edge of a large plate in a circle.  Put the ground turkey in the center. Sprinkle with the shredded cheese. Top with guacamole and yogurt.

Dive in!
